A review of new approaches bridging physical measurement and perception from recent reports is presented.
Sensory evaluation is a scientific discipline used to measure, analyze, evoke, and interpret the reactions to those characteristics of materials, such as foods and cosmetics, as they are perceived by the senses of sight, smell, taste, touch, and hearing.[1].
Huber pointed out that the challenge in detecting sensory impressions is to achieve the appropriate balance between generating the most objective data possible and achieving the highest possible level of standardization and importance of the correlation between sensory and measured instrumental data [2].
The advantage of modern in vivo instrumental or physical measurements over human sensory evaluation is the wealth of accurate, reproducible and objective data collected for the body’s reactions under natural testing conditions.
A drawback of this method is a lack of sensibility to differentiate target responses from background noises, while the human senses spontaneously detect only necessary signals.
Several exciting approaches have been proposed to bridge such gaps between instrumental measurement and human sensory perceptions. Examples for visual, haptic, and acoustic analysis are presented in this review.
